- 1/2 cup almond flour
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped (or 1 tsp dried)
- 1 tsp dried oregano
- Zest of 1 lemon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tbsp olive oil (for cooking)
- Optional: lemon wedges or keto tzatziki for serving
Instructions
- In a large bowl, combine ground meat, egg, almond flour, onion, garlic, parsley, dill, oregano, lemon zest, salt, and pepper. Mix gently until combined.
- Form mixture into small meatballs.
- Heat olive oil in a skillet over medium heat.
- Cook meatballs in batches, turning occasionally, until golden brown and cooked through, about 8–10 minutes.
- Remove from heat and rest for a few minutes before serving.
- Serve warm with lemon wedges or a keto-friendly sauce.
