  • 2 lbs boneless skinless chicken thighs or breasts, cut into chunks
  • 2 tbsp olive oil
  • 3 cups sliced mushrooms
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 1 cup halal heavy cream or canned coconut milk
  • ½ cup halal cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan-style cheese
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
  2. Heat olive oil in a large skillet over medium heat. Sauté mushrooms until browned, then add onion and cook until soft.
  3. Stir in garlic, thyme, parsley, paprika, salt, and pepper. Cook until fragrant.
  4. Add chicken pieces and cook just until lightly seared on the outside.
  5. Reduce heat and stir in heavy cream and cream cheese until smooth and creamy.
  6. Transfer mixture to the prepared casserole dish.
  7. Top with mozzarella and Parmesan-style cheese.
