Ingredients
- 1/4 cup Fresh Coriander Leaves
- 3 cloves Garlic
- 1 medium Green bell pepper
- 2 Lime wedges
- 1 medium Onion
- 1 medium Red bell pepper
- 1 cup Coconut milk
- 1 cup Jasmine rice
- 1 tsp Freshly Ground Black pepper
- 1 tsp Red pepper flakes
- 1 tsp Salt
- 1 tsp Turmeric
- 1 tbsp Coconut oil
- 1 cup Water
Instructions
- Rinse jasmine rice until water runs clear.
- Heat coconut oil, sauté onion, garlic, and bell peppers until softened.
- Add rice, turmeric, salt, black pepper, and red pepper flakes; toast briefly.
- Pour coconut milk and water, bring to boil, then simmer covered for 20 minutes.
- Remove from heat, let stand covered 5 minutes, fluff and serve with lime wedges and coriander.
