Honey BBQ Chicken Rice – a one-pan weeknight winner that delivers juicy chicken, smoky-sweet honey BBQ glaze, and perfectly cooked rice in one skillet.

- 1 lb boneless, skinless chicken breasts or thighs, cut into chunks
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice (uncooked)
- 2 cups chicken broth
- ½ cup BBQ sauce (use your favorite brand)
- 2 tbsp honey
- 1 tsp smoked paprika
- ½ tsp chili powder (optional, for a kick)
- Salt and pepper to taste
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 green onions, chopped (for garnish)
- Fresh parsley, for serving
Instructions
- Heat olive oil in a large skillet or pan over medium heat. Add chicken, season with salt, pepper, and smoked paprika, and cook until lightly browned. Remove and set aside.
- In the same pan, add onion and garlic; sauté until soft and fragrant.
- Stir in rice and toast for 1–2 minutes.
- Add chicken broth, BBQ sauce, honey, chili powder, and corn. Stir well, then return chicken to the pan.
- Cover and simmer on low heat for 18–20 minutes, or until the rice is tender and liquid is absorbed.
- Fluff the rice with a fork, garnish with green onions and parsley, and serve hot.
Notes
- For gluten-free meals, use a gluten-free BBQ sauce.
- Adjust chili powder to taste for more or less heat.
- Leftovers refrigerate well for up to 3–4 days; reheat gently on the stove or in the microwave.
- Customize with additional vegetables (peas, bell peppers) if desired.
