Description

Honey BBQ Chicken Rice – a one-pan weeknight winner that delivers juicy chicken, smoky-sweet honey BBQ glaze, and perfectly cooked rice in one skillet.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice (uncooked)
  • 2 cups chicken broth
  • ½ cup BBQ sauce (use your favorite brand)
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • ½ tsp chili powder (optional, for a kick)
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 green onions, chopped (for garnish)
  • Fresh parsley, for serving

Instructions

  1. Heat olive oil in a large skillet or pan over medium heat. Add chicken, season with salt, pepper, and smoked paprika, and cook until lightly browned. Remove and set aside.
  2. In the same pan, add onion and garlic; sauté until soft and fragrant.
  3. Stir in rice and toast for 1–2 minutes.
  4. Add chicken broth, BBQ sauce, honey, chili powder, and corn. Stir well, then return chicken to the pan.
  5. Cover and simmer on low heat for 18–20 minutes, or until the rice is tender and liquid is absorbed.
  6. Fluff the rice with a fork, garnish with green onions and parsley, and serve hot.

Notes

  • For gluten-free meals, use a gluten-free BBQ sauce.
  • Adjust chili powder to taste for more or less heat.
  • Leftovers refrigerate well for up to 3–4 days; reheat gently on the stove or in the microwave.
  • Customize with additional vegetables (peas, bell peppers) if desired.
