  • 1 small onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • lbs boneless, skinless chicken breasts or thighs
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 cups egg noodles
  • 1 tbsp lemon juice (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth, then add chicken, thyme, parsley, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer for 25–30 minutes, until chicken is tender.
  4. Remove chicken, shred with two forks, and return it to the pot.
  5. Add egg noodles and cook for 7–8 minutes or until noodles are tender.
  6. Stir in lemon juice if using, adjust seasoning, and garnish with fresh parsley.
