- 1 bay leaf

Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5–7 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, then add chicken, thyme, parsley, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer for 25–30 minutes, until chicken is tender.
- Remove chicken, shred with two forks, and return it to the pot.
- Add egg noodles and cook for 7–8 minutes or until noodles are tender.
- Stir in lemon juice if using, adjust seasoning, and garnish with fresh parsley.
