Description

High Protein Steak Fajita Bowl is a delicious 30-minute meal featuring juicy, boldly seasoned steak with colorful fajita veggies and cauliflower rice. This high-protein, low-carb bowl is perfect for healthy weeknight dinners and Pinterest-friendly meal prep.


Ingredients

  • lbs skirt steak or flank steak
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • 3 cups cauliflower rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 tbsp lime juice
  • Optional toppings: sliced avocado, fresh cilantro, dairy-free sour cream or yogurt

Instructions

  1. Season steak with chili powder, paprika, cumin, garlic powder, salt, and pepper.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  3. Sear steak 3–4 minutes per side (or to desired doneness). Remove, rest 5 minutes, then slice thinly.
  4. In the same skillet, add remaining olive oil. Sauté bell peppers and onion until tender-crisp.
  5. Push veggies to one side and add cauliflower rice. Cook 3–4 minutes until heated through.
  6. Stir in lime juice and adjust seasoning.
  7. Assemble bowls with cauliflower rice, veggies, and sliced steak. Add toppings if desired.

Notes

  • Rest the steak for 5 minutes before slicing to lock in juices.
