Instructions

- Stir in garlic, cumin, coriander, turmeric, salt, and pepper; cook 30 seconds until fragrant.
- Add lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 25–30 minutes until lentils are very tender.
- Use an immersion blender to lightly blend for a creamy texture, or leave chunky if preferred.
- Stir in lemon juice, adjust seasoning, and serve warm with garnish.
