  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1½ cups cooked green or brown lentils
  • 1½ cups vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 lbs potatoes, peeled and cubed
  • 3 tbsp unsalted butter or plant-based butter
  • ½ cup milk or plant-based milk
  • Salt and black pepper to taste

Instructions

  1. Boil potatoes in salted water until fork-tender. Drain and mash with butter, milk, salt, and pepper until creamy. Keep warm.
  2. Heat olive oil in a skillet over medium heat. Add onion and carrots and sauté until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add lentils, vegetable broth, tomato paste, thyme, smoked paprika, salt, and pepper.
  5. Simmer for 10–15 minutes, stirring occasionally.
  6. Stir in cornstarch slurry and cook until the stew thickens.
  7. Spoon mashed potatoes into bowls and top generously with lentil stew. Serve warm on its own or with crusty bread.
