Description

Hearty Beef Stew with Cheddar Herb Dumplings – A rich, slow-simmered beef stew loaded with tender vegetables and topped with fluffy cheddar herb dumplings for pure cozy comfort.


Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp tomato paste
  • 4 cups halal beef broth
  • 1 bay leaf
  • For the cheddar herb dumplings:
  • 1½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup halal shredded cheddar cheese
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¾ cup milk (or dairy-free milk)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides and season with salt and pepper.
  2. Add onion and garlic; cook until softened and fragrant.
  3. Stir in carrots, celery, potatoes, thyme, rosemary, paprika, and tomato paste. Mix well.
  4. Pour in beef broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 1½ hours or until beef is tender.
  5. Prepare the dumplings by mixing flour, baking powder, cheddar, parsley, thyme, and salt in a bowl.
  6. Add milk and olive oil, stirring until a soft dough forms.
  7. Drop spoonfuls of dumpling dough over the hot stew. Cover and simmer for 15–18 minutes without lifting the lid, allowing dumplings to steam and become fluffy.
  8. Serve hot with extra herbs on top.

Notes

  • Uses halal beef broth and halal cheese to align with halal dietary preferences.
  • Do not lift the lid while the dumplings steam to keep them fluffy and light.
  • Leftovers refrigerate well for 3–4 days; gently reheat on the stove or in the microwave.
  • To make gluten-free, substitute the all-purpose flour with a gluten-free flour blend and ensure the baking powder is gluten-free.
  • For a thicker stew, whisk together 1 tablespoon corn starch with 2 tablespoons water and stir in near the end of cooking.
