Ingredients

- 1½ lbs boneless skinless chicken breast, cut into bite-size pieces
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and black pepper to taste
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and season with Italian seasoning, paprika, garlic powder, salt, and pepper. Cook 5–6 minutes until golden and cooked through.
- Push chicken to one side of the skillet and add zucchini, bell peppers, and broccoli.
- Cook vegetables 4–5 minutes until tender-crisp.
- Add minced garlic and cook 30 seconds until fragrant.
- Drizzle with lemon juice and toss everything together.
- Taste and adjust seasoning. Garnish if desired and serve warm.
Notes
- Leftovers can be stored in an airtight container for up to 3 days.
- Garnish with fresh parsley for a pop of color.
- Serve with cooked quinoa, brown rice, or a side salad for a complete meal.
