- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 large carrots, sliced
- 2 celery stalks, chopped
- 3 medium potatoes, cubed
- 1 can (14 oz) diced tomatoes
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add the onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in the garlic and cook for 30 seconds.
- Add potatoes, diced tomatoes, beef broth, tomato paste, thyme, parsley, paprika, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until potatoes and carrots are tender.
- Taste and adjust seasoning as needed.
- Garnish with fresh parsley and serve warm.
Notes
- You can thicken the stew by mashing a few potato chunks or stirring in a slurry of cornstarch and water.
- Leftovers refrigerate well for up to 3-4 days; reheat on the stovetop.
- Replace ground beef with ground turkey for a lighter version.
- To keep the dish gluten-free, use gluten-free beef broth.
