  • 1 lb ground beef (halal)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add the onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add potatoes, diced tomatoes, beef broth, tomato paste, thyme, parsley, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until potatoes and carrots are tender.
  6. Taste and adjust seasoning as needed.
  7. Garnish with fresh parsley and serve warm.

Notes

  • You can thicken the stew by mashing a few potato chunks or stirring in a slurry of cornstarch and water.
  • Leftovers refrigerate well for up to 3-4 days; reheat on the stovetop.
  • Replace ground beef with ground turkey for a lighter version.
  • To keep the dish gluten-free, use gluten-free beef broth.
