- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme
- 4 medium potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup milk
- 1 cup heavy cream (or half-and-half)
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp chopped parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté 2–3 minutes until fragrant.
- Add ground beef, breaking it apart as it cooks. Season with salt, pepper, paprika, and thyme. Cook until browned, about 6–8 minutes. Drain excess fat if needed.
- In a bowl, whisk together milk, cream, and cornstarch until smooth.
- Layer half of the sliced potatoes in the baking dish, then spread half of the beef mixture on top. Sprinkle with half of each cheese.
- Repeat layers with remaining potatoes, beef, and cheese. Pour milk mixture evenly over the top.
- Cover with foil and bake for 40 minutes. Remove foil and bake another 15–20 minutes, until golden and bubbly.
- Let cool slightly before serving. Garnish with fresh parsley.
Notes
- If you prefer a thicker sauce, increase cornstarch to 2 tablespoons or cook uncovered a bit longer to reduce the liquid.
- For a lighter version, use part-skim mozzarella and cheddar and replace heavy cream with 2% milk.
- Leftovers reheat well. This casserole freezes nicely; freeze before baking and bake from frozen, adding 15–20 minutes.
- For extra color and flavor, add thinly sliced bell peppers or mushrooms to the beef layer.
