Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 cup Kalamata olives, pitted and halved
- 1 cup plain yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a bowl combine yogurt, garlic, lemon juice, salt, and pepper to make tzatziki. Chill 10 minutes.
- Cook quinoa according to package, fluff and cool.
- Dice cucumber, halve tomatoes, slice onion, halve olives.
- Divide quinoa into containers, top with chicken and veggies, add tzatziki, garnish with parsley.
- Seal containers, refrigerate up to 4 days. Reheat quinoa and chicken if desired before serving.
