  • 34 lb beef chuck roast (halal)
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 carrots, cut into large chunks
  • 45 potatoes, quartered
  • 3 cloves garlic, minced
  • 3 cups beef broth (halal, gluten free)
  • 1 tbsp tomato paste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  2. Sear the roast on all sides until deeply browned, about 2–3 minutes per side.
  3. Add onion, carrots, potatoes, and garlic to the bottom of the slow cooker.
  4. Place the seared roast on top of the vegetables.
  5. Whisk beef broth and tomato paste together, then pour around the roast.
  6. Cover and cook on LOW for 9–10 hours until the beef is fall-apart tender.
  7. Slice or shred the beef and spoon the rich juices over the top before serving.

Notes

  • Brown the roast well for maximum depth of flavor.
  • Uses halal beef broth; you can substitute with gluten-free broth if needed.
  • For a thicker gravy, whisk in a cornstarch slurry during the last 15 minutes of cooking.
