- ½ cup crumbled feta cheese
- Optional: grated Parmesan or chili flakes for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté briefly until fragrant.
- Stir in gnocchi and cook for a few minutes until lightly golden.
- Pour in vegetable broth and cooking cream. Simmer gently.
- Add spinach and cook until wilted.
- Stir in oregano, salt, and pepper.
- Fold in crumbled feta and cook until the sauce thickens slightly and everything is well coated.
- Serve warm with extra feta or Parmesan if desired.
Notes
- If you prefer a thicker sauce, simmer a bit longer to reduce the liquid.
- You can substitute kale or baby spinach if needed.
