Gingerbread Rice Krispie Treats: Soft, chewy, and warmly spiced holiday treats that are gluten-free, refined sugar-free, and easily made vegan. A no-bake Christmas favorite with ginger, cinnamon, cloves, and nutmeg in every bite.

- 6 cups gluten-free crispy rice cereal
- 3 cups mini marshmallows or vegan marshmallows
- 3 tbsp coconut oil or vegan butter
- ¼ cup maple syrup
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Lightly grease an 8×8-inch pan and set aside.
- In a large pot, melt coconut oil over low heat.
- Add marshmallows and stir gently until fully melted and smooth.
- Stir in maple syrup, ginger, cinnamon, cloves, nutmeg, vanilla, and salt.
- Remove from heat and gently fold in crispy rice cereal until evenly coated.
- Press mixture firmly into the prepared pan.
- Let set at room temperature until firm, then cut into squares and serve.
Notes
- For a vegan version, use vegan marshmallows and vegan butter.
- Let the treats set at room temperature, or chill in the refrigerator to speed up the setting.
- Store in an airtight container for up to 3-4 days.
- Greasing your hands or the spatula helps prevent sticking when pressing the mixture into the pan.
