- 4 boneless skinless chicken breasts
- 6 medium potatoes, cubed
- 1 small onion, diced (optional)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 tbsp butter, melted
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Place potatoes and onion (if using) in the bottom of the crockpot.
- Season chicken breasts with salt, pepper, garlic powder, and paprika. Place on top of the potatoes.
- In a bowl, whisk together heavy cream, chicken broth, Parmesan cheese, minced garlic, Italian seasoning, and melted butter.
- Pour the mixture evenly over the chicken and potatoes.
- Cover and cook on low for 5–6 hours or on high for 3–4 hours, until chicken is tender and potatoes are soft.
- Stir gently before serving to coat everything in the sauce.
- Garnish with fresh parsley.
Notes
- Onion is optional but adds sweetness; you can skip it if you prefer.
- For a thicker sauce, stir in an extra 1–2 tablespoons of Parmesan cheese at the end.
- Leftovers store in the refrigerator for up to 3 days.
