  • 1 ½ lbs baby potatoes, halved
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ¾ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp butter
  • Fresh parsley for garnish
  • Optional: ½ cup cream cheese for extra creaminess

Instructions

  1. Season chicken with salt, pepper, and paprika, then place in the crockpot.
  2. Add the halved baby potatoes around and on top of the chicken.
  3. In a bowl, whisk together heavy cream, chicken broth, Parmesan, garlic, Italian seasoning, and butter.
  4. Pour the sauce evenly over the chicken and potatoes.
  5. Cover and cook on low for 4–5 hours or high for 2½–3 hours until chicken is tender.
  6. For thicker sauce, stir in cream cheese during the last 20 minutes.
  7. Taste, adjust seasoning, and garnish with fresh parsley before serving.
