- 2 lbs halal beef stew meat, cut into chunks
- 3 tbsp olive oil
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp flour
- 6 cups beef broth
- 1 tsp dried thyme
- 1 bay leaf
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp Worcestershire sauce (halal)
- 3 medium potatoes, cubed
- 2 large carrots, sliced
- For the cheesy bread topping:
- Baguette slices or crusty bread
- 1–2 cups shredded mozzarella or Gruyère
- Parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove and set aside.
- Reduce heat to medium. Add butter and sliced onions. Cook slowly for 20–25 minutes, stirring often, until deep golden and caramelized.
- Stir in garlic and cook for 1 minute. Add flour and mix to coat the onions.
- Pour in beef broth and Worcestershire sauce, scraping up browned bits from the bottom.
- Return the beef to the pot along with thyme, bay leaf, potatoes, and carrots.
- Bring to a simmer, cover, and cook on low for 1½–2 hours until the beef is tender.
- While the stew finishes, toast baguette slices topped with mozzarella or Gruyère until melted and golden.
- Remove the bay leaf, taste, and adjust seasoning.
- Serve the stew hot with cheesy bread on top or on the side. Garnish with parsley.
