Description

French Onion Beef Stew — A deeply flavorful, comforting braise of tender halal beef with caramelized onions, potatoes, and carrots, finished with a golden cheesy bread topping for a cozy, restaurant-worthy meal.

  • 2 lbs halal beef stew meat, cut into chunks
  • 3 tbsp olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp flour
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp Worcestershire sauce (halal)
  • 3 medium potatoes, cubed
  • 2 large carrots, sliced
  • For the cheesy bread topping:
  • Baguette slices or crusty bread
  • 12 cups shredded mozzarella or Gruyère
  • Parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove and set aside.
  2. Reduce heat to medium. Add butter and sliced onions. Cook slowly for 20–25 minutes, stirring often, until deep golden and caramelized.
  3. Stir in garlic and cook for 1 minute. Add flour and mix to coat the onions.
  4. Pour in beef broth and Worcestershire sauce, scraping up browned bits from the bottom.
  5. Return the beef to the pot along with thyme, bay leaf, potatoes, and carrots.
  6. Bring to a simmer, cover, and cook on low for 1½–2 hours until the beef is tender.
  7. While the stew finishes, toast baguette slices topped with mozzarella or Gruyère until melted and golden.
  8. Remove the bay leaf, taste, and adjust seasoning.
  9. Serve the stew hot with cheesy bread on top or on the side. Garnish with parsley.
