  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • 1 lb salmon fillet, skin removed
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 1 tbsp soy sauce or tamari (gluten free if needed)
  • ½ cup cucumber, diced
  • 2 tbsp green onions, sliced
  • Optional for serving: roasted seaweed snacks, avocado slices

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix warm rice with rice vinegar, sugar, and salt. Press evenly into the baking dish.
  3. Season salmon with olive oil, garlic powder, and black pepper. Place on top of the rice.
  4. Bake for 15–18 minutes until salmon is cooked through.
  5. Flake salmon gently with a fork.
  6. In a small bowl, mix mayonnaise, sriracha, and soy sauce.
  7. Spread spicy mayo evenly over the salmon.
  8. Bake an additional 10–12 minutes until bubbly and lightly golden.
  9. Top with cucumber and green onions before serving. Scoop with seaweed snacks or enjoy as-is.
