  • Olive oil — 1 tbsp
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1½ cups cooked green or brown lentils
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • Potatoes (2 lbs), peeled and cubed
  • 3 tbsp olive oil or plant-based butter
  • ½ cup plant-based milk
  • Salt and black pepper to taste

Instructions

  1. Boil potatoes in salted water until fork-tender. Drain and mash with olive oil, plant-based milk, salt, and pepper. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add onion and carrots and sauté until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add lentils, vegetable broth, tomato paste, thyme, paprika, salt, and pepper.
  5. Simmer for 10–15 minutes until thickened and flavorful.
  6. Taste and adjust seasoning as needed.
  7. Spoon mashed potatoes into bowls and top generously with lentil stew. Serve warm.
