- 1 medium onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1½ cups cooked green or brown lentils
- 1 cup vegetable broth
- 1 tbsp tomato paste

- ½ tsp smoked paprika
- Salt and black pepper to taste
- Potatoes (2 lbs), peeled and cubed
- 3 tbsp olive oil or plant-based butter
- ½ cup plant-based milk
- Salt and black pepper to taste
Instructions
- Boil potatoes in salted water until fork-tender. Drain and mash with olive oil, plant-based milk, salt, and pepper. Set aside.
- Heat olive oil in a skillet over medium heat. Add onion and carrots and sauté until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add lentils, vegetable broth, tomato paste, thyme, paprika, salt, and pepper.
- Simmer for 10–15 minutes until thickened and flavorful.
- Taste and adjust seasoning as needed.
- Spoon mashed potatoes into bowls and top generously with lentil stew. Serve warm.
