- 1 tsp dried thyme
- ½ tsp smoked paprika
- Salt and black pepper to taste

Instructions
- Heat olive oil in a large pot over medium heat. Add onion and carrots and sauté until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add potatoes, lentils, diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 30 minutes until lentils and potatoes are tender.
