Instructions
- Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened.
- Stir in garlic, cauliflower, carrots, thyme, parsley, paprika, salt, and pepper. Cook 4–5 minutes until slightly tender.
- Add shredded chicken, heavy cream, chicken broth, and cream cheese. Stir until smooth and creamy.
- Transfer mixture to the casserole dish and spread evenly.
- Sprinkle shredded cheese over the top.
- Bake for 25–30 minutes until bubbly and lightly golden.
- Rest for 5 minutes before serving.
