  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 cups chicken broth
  • 2 cups egg noodles (or any halal-friendly noodles)
  • 1 cup halal cream of chicken soup (or homemade alternative)
  • 1 cup heavy cream or canned coconut milk
  • 2 tbsp olive oil (optional for extra richness)

Instructions

  1. Add chicken, carrots, celery, onion, garlic, thyme, parsley, bay leaf, salt, pepper, and chicken broth to the crockpot.
  2. Cover and cook on Low for 6–7 hours or on High for 3–4 hours.
  3. Remove the chicken, shred it, and return it to the crockpot.
  4. Stir in egg noodles and cook on High for 15–20 minutes or until tender.
  5. Add cream of chicken soup and heavy cream (or coconut milk). Mix well until creamy.
  6. Taste and adjust seasoning. Serve warm and enjoy.
