Instructions
- Add chicken, carrots, celery, onion, garlic, thyme, parsley, bay leaf, salt, pepper, and chicken broth to the crockpot.
- Cover and cook on Low for 6–7 hours or on High for 3–4 hours.
- Remove the chicken, shred it, and return it to the crockpot.
- Stir in egg noodles and cook on High for 15–20 minutes or until tender.
- Add cream of chicken soup and heavy cream (or coconut milk). Mix well until creamy.
