- 1/4 cup maple syrup or honey
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1 large egg or flax egg (1 tablespoon ground flaxseed plus 3 tablespoons water)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- Optional toppings: shredded coconut, extra walnuts
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, ginger, and salt.
- In a separate bowl, whisk together grated carrot, egg (or flax egg), applesauce, maple syrup, melted coconut oil, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in raisins or walnuts if using.
- Scoop dough by tablespoonfuls onto the prepared sheet and flatten slightly to form cookies.
- Bake 12–14 minutes, until edges are lightly golden. Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
Notes
- For a gluten-free version, use certified gluten-free oats and almond flour instead of wheat flour.
- These cookies can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 2 months.
- To make them vegan, use a flax egg or a commercial vegan egg replacer.
