- ¼ cup brown sugar
- 1 large egg

- 1¼ cups rolled oats
- ¾ cup all-purpose flour
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- Optional: ¼ cup raisins or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream butter, honey, and brown sugar until smooth.
- Add egg and vanilla extract and mix well.
- Stir in oats, flour, baking soda, cinnamon, and salt until combined.
- Fold in optional raisins or nuts if using.
- Scoop spoonfuls of dough onto the baking sheet and gently flatten.
- Bake for 10–12 minutes until edges are lightly golden and centers are soft.
- Cool slightly before serving.
Notes
- For chewier cookies, leave dough slightly underbaked and let cookies rest on the sheet for 2 minutes before transferring.
- To make them lighter, reduce butter by 1–2 tablespoons and add a splash of milk.
- Store in an airtight container at room temperature for up to 3 days, or freeze baked cookies for longer storage.
