CrockPot Chicken Tortellini: A creamy, cozy 5-ingredient slow cooker dinner featuring tender chicken, cheese tortellini, and a rich marinara sauce—the ultimate comforting weeknight meal.


Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 package (9–12 oz) cheese tortellini (fresh or frozen)
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • Optional: fresh basil for topping

Instructions

  1. Place chicken, onion, garlic, marinara sauce, diced tomatoes, chicken broth, basil, oregano, paprika, salt, and pepper into the crockpot.
  2. Stir lightly to coat the chicken.
  3. Cover and cook on low for 4–5 hours or high for 2½–3 hours.
  4. Shred the chicken directly in the slow cooker.
  5. Add the tortellini and stir into the sauce.
  6. Cover and cook on high for 20–30 minutes, until tortellini is tender.
  7. Stir in mozzarella and Parmesan until melted and creamy.
  8. Garnish with fresh basil and serve warm.

Notes

  • For a creamier sauce, stir in a splash of cream or half-and-half at the end (optional).
  • If using frozen tortellini, add 5–7 minutes to cooking time.
  • To reduce sodium, use low-sodium marinara and broth, and limit added salt.
  • Garnish with extra fresh basil just before serving for brightness.
