  • 2 celery stalks, sliced
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • Optional: fresh parsley for topping

Instructions

  1. In a skillet over medium heat, brown the halal ground beef, seasoning with a pinch of salt and pepper. Drain excess fat if needed.
  2. Layer the crockpot with potatoes, carrots, celery, onion, kidney beans, and cooked beef.
  3. In a bowl, whisk together diced tomatoes, tomato sauce, beef broth, paprika, garlic powder, onion powder, thyme, and additional salt and pepper.
  4. Pour the tomato mixture evenly over the layered ingredients in the crockpot.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until vegetables are tender.
  6. Stir gently before serving and top with fresh parsley, if desired.

Notes

  • For a lighter version, substitute ground turkey for the beef.
  • Use low-sodium beef broth to control saltiness.
  • Leftovers refrigerate well for 3–4 days and freeze nicely for longer storage.
