- 1 can (8 oz) tomato sauce
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- Salt and black pepper to taste
- Optional: fresh parsley for topping
Instructions
- In a skillet over medium heat, brown the halal ground beef, seasoning with a pinch of salt and pepper. Drain excess fat if needed.
- Layer the crockpot with potatoes, carrots, celery, onion, kidney beans, and cooked beef.
- In a bowl, whisk together diced tomatoes, tomato sauce, beef broth, paprika, garlic powder, onion powder, thyme, and additional salt and pepper.
- Pour the tomato mixture evenly over the layered ingredients in the crockpot.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until vegetables are tender.
- Stir gently before serving and top with fresh parsley, if desired.

- For a lighter version, substitute ground turkey for the beef.
- Use low-sodium beef broth to control saltiness.
- Leftovers refrigerate well for 3–4 days and freeze nicely for longer storage.
