  • 1 lb halal ground beef or halal turkey Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 4 cups beef broth or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 810 lasagna noodles, broken into pieces
  • 1½ cups mozzarella cheese, shredded
  • 1 cup ricotta cheese
  • ½ cup Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Brown the halal ground beef or turkey sausage in a skillet. Drain excess fat if needed.
  2. Add the meat, onion, garlic, marinara sauce, broth, diced tomatoes, basil, oregano, paprika, pepper, and salt to the crock pot.
  3. Cover and cook on low for 4 hours or high for 2–3 hours.
  4. During the final 30 minutes, stir in the broken lasagna noodles. Cover and cook until tender.
  5. In a bowl, mix ricotta, mozzarella, and Parmesan.
  6. Ladle the soup into bowls and top each serving with a generous scoop of the cheese mixture.
  7. Garnish with fresh basil or parsley.

Notes

  • You can substitute halal turkey Italian sausage for halal ground beef.
  • For a gluten-free version, use gluten-free lasagna noodles.
  • To lighten it slightly, use part-skim mozzarella and a bit less ricotta.
  • If the soup is too thick, add more broth to reach your desired consistency.
