Description
Crock Pot French Dip Sandwiches: Tender, slow-cooked beef piled on toasted hoagie rolls with melted provolone, served with a rich au jus—an easy, hands-off dinner idea perfect for Pinterest-worthy weeknight meals.
Ingredients
Scale
- 3 lbs beef chuck roast
- 1 tbsp olive oil
- 1 packet onion soup mix
- 1 tbsp Worcestershire sauce
- 3 cups beef broth
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp black pepper
- 6 hoagie rolls, split and toasted
- 6 slices provolone cheese
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 2–3 minutes per side.
- Place the roast in your crock pot. Add onion soup mix, Worcestershire sauce, beef broth, garlic powder, thyme, and pepper.
- Cover and cook on low for 8 hours or high for 4–5 hours, until beef is tender and easily shreds with a fork.
- Remove beef and shred. Strain the liquid to make the au jus dipping sauce.
- Pile shredded beef onto toasted hoagie rolls, top with provolone cheese, and broil briefly until melted.
- Serve each sandwich with a small bowl of warm au jus for dipping.
Notes
- Brown the beef well for depth of flavor—don’t skip the browning step.
- For a thinner au jus, add extra beef broth during the final simmer.
- Shred the beef while warm for easier handling and juicier sandwiches.
- Make ahead: refrigerate the au jus and shredded beef, then reheat before serving.
- Swap provolone with Swiss or cheddar if you prefer a different melt.
- Leftovers refrigerate for up to 3 days or freeze for longer storage.
