- 1 tsp onion powder
- 1 tsp paprika
- 1 cup beef broth (gluten free)
- 1 tbsp gluten free Worcestershire sauce
- 3 cloves garlic, minced
- 1 large onion, sliced
- 4 carrots, cut into chunks
- 3 potatoes, cut into chunks
- Optional: fresh rosemary or thyme
Instructions
- Heat olive oil in a skillet over medium-high heat. Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika.
- Sear the roast on all sides until nicely browned, about 2–3 minutes per side.
- Place onion, carrots, and potatoes in the bottom of the crock pot.
- Set the seared roast on top of the vegetables.
- Pour beef broth and Worcestershire sauce over the roast, then add minced garlic and herbs if using.
- Cover and cook on low for 8 hours until beef is melt-in-your-mouth tender.
- Slice or shred the roast and spoon the juices over the top before serving.
