- 1 cup dill pickle juice
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder

- 2 eggs
- 2 tbsp olive oil
Instructions
- Place chicken in a bowl and pour pickle juice over it. Cover and refrigerate to brine.
- Preheat oven to 200°C and lightly grease a baking dish or line a sheet pan.
- In one bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- In another bowl, beat the eggs.
- Remove chicken from brine and pat dry. Dip each piece into egg, then coat well with the breadcrumb mixture.
- Arrange chicken on the pan, drizzle lightly with olive oil, and bake until golden, crispy, and cooked through.
- Rest briefly before serving.
