  • 4 boneless skinless chicken breasts
  • 1 cup dill pickle slices, finely chopped
  • ¾ cup grated Parmesan cheese
  • ¾ cup breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • ½ tsp salt
  • 2 large eggs
  • 2 tbsp olive oil
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish or line a baking sheet with parchment paper.
  2. Pat chicken breasts dry and set aside.
  3. In a bowl, combine chopped dill pickles, Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. In another bowl, whisk eggs until smooth.
  5. Dip each chicken breast into the egg, then press firmly into the pickle Parmesan mixture to coat evenly.
  6. Place coated chicken on the prepared baking dish. Lightly spray tops with cooking spray and drizzle with olive oil.
  7. Bake for 40–45 minutes until chicken is cooked through and coating is golden and crispy.
  8. Rest for 5 minutes before serving.
