  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 1½ cups cooked black lentils (or puy, brown, or green lentils)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 1 cup vegetable broth
  • ¾ cup heavy cream or coconut cream
  • ½ cup grated Parmesan-style cheese
  • Optional garnish: fresh basil or parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion for 3–4 minutes until soft.
  2. Add garlic and red pepper flakes; cook for 30 seconds until fragrant.
  3. Stir in sun-dried tomatoes, lentils, Italian seasoning, smoked paprika, salt, and pepper.
  4. Pour in vegetable broth and simmer for 5 minutes.
  5. Reduce heat and stir in cream and cheese. Simmer gently for 8–10 minutes until thick and creamy.
  6. Taste and adjust seasoning. Garnish and serve warm with bread, rice, or sweet potatoes.

  • Vegetarian and gluten-free dish (no meat or gluten ingredients).
  • Can use any cooked lentils (black lentils, puy, brown, or green).
  • If using coconut cream, you may need to adjust thickness with extra broth.
