Ingredients

  • 1 lb ground beef (or ground turkey for a lighter option)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 cups potatoes, peeled and diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste
  • Optional: green onions, cilantro, extra cheese

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
  2. Add onion and garlic, cooking until softened.
  3. Stir in potatoes, diced tomatoes, black beans, corn, smoked paprika, chili powder, cumin, salt, and pepper.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer 15–20 minutes, or until potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning.
  8. Serve hot topped with green onions, cilantro, or extra cheese.

Notes

  • Make it gluten-free by using gluten-free chicken broth.
  • To lighten the dish, substitute ground turkey for beef.
  • Leftovers reheat well and can be stored in the refrigerator for 3–4 days.
  • For a thicker soup, mash a portion of the potatoes before serving.
  • Top with extra cheese, cilantro, or sliced green onions for extra flavor.
