- 1 small onion, diced
- 2 garlic cloves, minced
- 2 cups potatoes, peeled and diced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp cumin
- Salt and black pepper to taste
- Optional: green onions, cilantro, extra cheese
Instructions
- In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
- Add onion and garlic, cooking until softened.
- Stir in potatoes, diced tomatoes, black beans, corn, smoked paprika, chili powder, cumin, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer 15–20 minutes, or until potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and creamy.
- Taste and adjust seasoning.
- Serve hot topped with green onions, cilantro, or extra cheese.
Notes
- Make it gluten-free by using gluten-free chicken broth.
- To lighten the dish, substitute ground turkey for beef.
