Description

Creamy Chicken Stroganoff is a creamy, comforting one-pan dinner ready in 30 minutes, featuring tender chicken, golden mushrooms, and a silky sour cream sauce. This quick weeknight recipe pairs beautifully with egg noodles, mashed potatoes, or rice for a satisfying, restaurant-quality Stroganoff at home.

  • 1 lb boneless skinless chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, diced
  • 3 cups sliced mushrooms
  • 3 garlic cloves, minced
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • Optional: fresh parsley for topping
  • Optional: cooked egg noodles or rice for serving

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken strips, season with salt and pepper, and cook until lightly browned. Remove and set aside.
  2. In the same skillet, add onion and mushrooms. Cook until softened and golden.
  3. Stir in garlic and cook 1 minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir for 1–2 minutes.
  5. Pour in the chicken broth and stir until smooth.
  6. Add sour cream, paprika, parsley, thyme, salt, and pepper. Simmer gently until creamy.
  7. Return the chicken to the skillet and simmer 3–4 minutes until heated through.
  8. Serve over egg noodles, mashed potatoes, or rice, topped with fresh parsley.

Notes

  • To make gluten-free, use gluten-free flour and serve with gluten-free noodles or rice.
  • For a lighter version, substitute part of the sour cream with Greek yogurt and stir in at the end.
  • Leftovers refrigerate for up to 3 days; reheat gently on the stovetop.
  • If the sauce thickens too much, thin with a splash of broth or water.
