  • 2 cups cooked shredded chicken

  • 1 tsp dried parsley

  • 2 cups egg noodles
  • 1 cup heavy cream or half-and-half
  • 2 tbsp flour mixed with 2 tbsp water (optional for thicker soup)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Pour in chicken broth, add shredded chicken, thyme, parsley, salt, and pepper. Bring to a simmer.
  3. Add egg noodles and cook according to package instructions, usually 7–8 minutes.
  4. Stir in heavy cream. If you prefer a thicker broth, mix in the flour slurry and simmer for 2–3 minutes until creamy.
  5. Taste and adjust seasoning, then garnish with fresh parsley before serving.

Notes

  • For gluten-free option, use gluten-free egg noodles and omit the flour slurry.
  • To lighten the soup, substitute half-and-half for heavy cream or use a lighter cream.
  • Leftovers refrigerate well for up to 3–4 days; reheat gently over medium heat.
