Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
- Add uncooked rice, shredded chicken, chicken broth, thyme, parsley, paprika, salt, and pepper.
- Bring to a boil, reduce heat, and simmer 35–40 minutes until rice is tender. Stir occasionally to prevent sticking.
- Stir in heavy cream and butter (if using). Simmer 5 more minutes until creamy and heated through.
- Adjust seasoning and serve warm topped with fresh parsley or a splash of lemon.

- You can substitute half-and-half for a lighter version or use less cream for a lower-fat option.
- Leftover soup thickens as it sits; thin with additional broth or water if needed.
