- 2½ lbs boneless skinless chicken thighs or breasts (halal)
- 1½ lbs baby potatoes, halved
- 1 cup heavy cream
- ½ cup chicken broth (gluten free)
- ¾ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil or melted butter
- Optional garnish: chopped parsley
Instructions
- Add potatoes to the bottom of the crockpot and drizzle with olive oil. Season lightly with salt and pepper.
- Place chicken on top of the potatoes and season with Italian seasoning, paprika, salt, and pepper.
- In a bowl, whisk together heavy cream, chicken broth, garlic, and Parmesan cheese.
- Pour sauce evenly over the chicken and potatoes.
- Cover and cook on low for 6 hours or until chicken is tender and cooked through.
- Gently stir before serving to coat everything in the creamy garlic Parmesan sauce.
- Garnish with parsley if desired and serve warm.

- For even cooking, cut potatoes to roughly equal sizes.
- If using chicken breasts instead of thighs, cooking time remains similar; ensure internal temperature reaches 165°F (74°C).
