Cozy Garlic Parmesan Crockpot Chicken and Potatoes – Creamy, garlicky and ultra comforting, this slow cooker dinner features tender halal chicken thighs or breasts, halved baby potatoes, and a rich garlic parmesan sauce perfect for a cozy weeknight meal.


Ingredients

  • lbs boneless skinless chicken thighs or breasts (halal)
  • lbs baby potatoes, halved
  • 1 cup heavy cream
  • ½ cup chicken broth (gluten free)
  • ¾ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil or melted butter
  • Optional garnish: chopped parsley

Instructions

  1. Add potatoes to the bottom of the crockpot and drizzle with olive oil. Season lightly with salt and pepper.
  2. Place chicken on top of the potatoes and season with Italian seasoning, paprika, salt, and pepper.
  3. In a bowl, whisk together heavy cream, chicken broth, garlic, and Parmesan cheese.
  4. Pour sauce evenly over the chicken and potatoes.
  5. Cover and cook on low for 6 hours or until chicken is tender and cooked through.
  6. Gently stir before serving to coat everything in the creamy garlic Parmesan sauce.
  7. Garnish with parsley if desired and serve warm.

Notes

  • For even cooking, cut potatoes to roughly equal sizes.
  • If using chicken breasts instead of thighs, cooking time remains similar; ensure internal temperature reaches 165°F (74°C).
  • To thicken the sauce, whisk in 1–2 tablespoons cornstarch dissolved in cold water during the last 30 minutes of cooking.
  • Using gluten-free chicken broth keeps this dish gluten-free.
