Ingredients

- 2 large eggs
- 1½ cups almond flour
- 1 teaspoon baking powder
- Optional toppings: fresh herbs, olive oil, extra cheese, salt & pepper
Instructions
- Blend cottage cheese and eggs until smooth.
- Combine almond flour and baking powder in a bowl.
- Mix wet and dry ingredients to form dough.
- Divide and flatten into ¼-inch thick rounds.
- Cook on skillet or bake at 375°F for 10–12 minutes.
- Garnish and serve warm.

- Use full-fat cottage cheese for best texture.
- Blend cottage cheese to avoid lumps.
- Store in fridge up to 5 days.
