Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until soft.
  2. Stir in garlic, ginger, paprika, cumin, salt, and pepper. Cook 30 seconds until fragrant.
  3. Add chicken and cook for 5–6 minutes until lightly browned.
  4. Pour in coconut milk and chicken broth. Stir well and bring to a gentle simmer.
  5. Reduce heat and simmer for 12–15 minutes until chicken is cooked through and sauce is slightly thickened.
  6. Spoon coconut chicken over cooked rice and add desired toppings before serving.
