- 500 g boneless skinless chicken breast or thighs
- 1 cup long-grain rice, rinsed
- 1 can coconut milk (400 ml)
- 1 cup chicken broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp ground ginger
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- Optional: fresh cilantro or lime wedges for serving
Instructions
- Heat olive oil in a large skillet or pan over medium heat.
- Add chicken and cook until lightly golden on both sides. Remove and set aside.
- In the same pan, sauté onion until soft, then add garlic and cook until fragrant.
- Stir in rice, coconut milk, chicken broth, ginger, paprika, salt, and pepper.
- Return chicken to the pan and gently stir.
- Cover and simmer on low heat until the rice is tender and the chicken is cooked through.
- Let rest briefly, then garnish if desired and serve warm.
Notes
- For a creamier texture, simmer a little longer to fully tenderize the rice.
- Light coconut milk can be used to reduce calories, but keep in mind the richness will be milder.
