Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
- Stir in garlic, cumin, chili powder, and paprika. Cook briefly until fragrant.
- Add chicken broth, crushed tomatoes, corn, black beans, salt, and pepper. Bring to a simmer.
- Stir in shredded chicken and cook until heated through.
- Add lime juice and adjust seasoning if needed.
- Ladle into bowls and top with tortilla strips, avocado, cheese, and cilantro as desired.
