Description

Chocolate Covered Cherry Rice Krispies Treats – a vibrant, no-bake dessert that combines crisp Rice Krispies, gooey marshmallows, juicy cherries, and a rich chocolate drizzle for a crowd-pleasing treat in minutes.


Ingredients

  • 6 cups rice cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • ¾ cup chopped maraschino cherries, patted dry
  • ½ tsp cherry extract or vanilla extract
  • Pinch of salt
  • ¾ cup semi-sweet chocolate chips, melted

Instructions

  1. Line a 9×13-inch pan with parchment paper and lightly grease it.
  2. In a large pot over low heat, melt the butter completely.
  3. Add marshmallows and stir until fully melted and smooth.
  4. Remove from heat and stir in cherry extract and salt.
  5. Gently fold in rice cereal until evenly coated.
  6. Add chopped cherries and mix carefully to distribute evenly.
  7. Press mixture firmly into the prepared pan.
  8. Drizzle or spread melted chocolate over the top, or cut into bars and dip halfway in chocolate.
  9. Let set until firm, then slice and serve.

Notes

  • You can substitute vanilla extract for cherry extract if preferred.
  • For a quicker set, refrigerate the bars for about 10 minutes before slicing.
  • Use gluten-free rice cereal if you need it to be gluten-free (check that the cereal is labeled gluten-free).
  • Store leftovers in an airtight container at room temperature for up to 3–4 days or refrigerate for longer freshness.
