Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 can (14 oz) diced tomatoes (optional)
  • 2 cups cheese tortellini (fresh or frozen)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp thyme

  • 1/2 to 1 cup heavy cream (optional for creamy version)

  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Add shredded chicken, chicken broth, tomatoes if using, basil, oregano, thyme, paprika, salt, and pepper.
  4. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Add tortellini and cook for 6–8 minutes, or until tender.
  6. Stir in spinach to wilt, or add heavy cream for a creamy version.
  7. Taste and adjust seasoning.
  8. Serve warm with parsley or halal Parmesan if desired.
