  • 1 1/2 cups uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 cup milk
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup frozen peas and carrots
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. In a large bowl, whisk together chicken broth, milk, cream cheese, garlic powder, onion powder, paprika, pepper, and salt until mostly smooth.
  4. Add the uncooked rice, shredded chicken, and frozen vegetables; stir to combine.
  5. Pour the mixture into the baking dish and spread evenly.
  6. Cover tightly with foil and bake for 45 minutes.
  7. Remove the foil, sprinkle cheddar cheese on top, and bake for an additional 15 minutes, or until the rice is tender and the top is melted and bubbly.
  8. Let rest for 10 minutes before serving. Garnish with parsley if desired.

  • Tip: Use leftover cooked rice to shorten the bake time.
