Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until softened.
  2. Stir in potatoes, shredded chicken, chicken broth, thyme, parsley, paprika, salt, and pepper.
  3. Bring to a boil, reduce heat, and simmer 15–20 minutes until potatoes are tender.
  4. For a thicker soup, melt butter in a small pan, whisk in flour, and stir the roux into the pot.
  5. Add heavy cream and peas, simmer 5 more minutes until creamy and heated through.
  6. Serve warm with crackers or fresh parsley.

Notes

  • Gluten-free option: omit the flour and butter or use a gluten-free thickener.
  • To lighter the recipe, substitute half-and-half or milk for the heavy cream and reduce or omit the butter.
