  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • lbs boneless, skinless chicken breasts or thighs
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 cups egg noodles
  • 1 tbsp lemon juice (optional, for brightness)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth, then add chicken, thyme, parsley, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes until chicken is tender.
  4. Remove chicken, shred with two forks, and return it to the pot.
  5. Add egg noodles and cook for 7-8 minutes, or until noodles are tender.
  6. Stir in lemon juice if using, adjust seasoning, and garnish with fresh parsley.
