Description

Ingredients

  • 8 oz egg noodles (or any pasta of choice)
  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tsp Italian seasoning (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook noodles according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden and fully cooked through, about 6–8 minutes. Remove chicken and set aside.
  3. In the same skillet, add butter and garlic. Sauté for 1–2 minutes until fragrant.
  4. Pour in chicken broth and stir, scraping up any browned bits from the pan. Let simmer for 2 minutes.
  5. Add cooked noodles and chicken back into the skillet. Toss to coat well in the buttery sauce.
  6. Stir in Parmesan cheese, salt, pepper, and Italian seasoning. Mix until everything is evenly coated and creamy.
  7. Garnish with chopped parsley and serve warm.

Notes

  • For a lighter version, use part-skim Parmesan and reduce butter to 1 tablespoon.
  • Feel free to substitute gluten-free noodles if needed.
  • To boost veggies, stir in sautéed mushrooms or peas.
  • Leftovers can be stored in an airtight container for up to 3 days.
