- 2 tbsp olive oil
- 1 lb boneless skinless chicken breast, diced
- 2 tbsp butter
- 2 cloves garlic, minced
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 tsp Italian seasoning (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook noodles according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden and fully cooked through, about 6–8 minutes. Remove chicken and set aside.
- In the same skillet, add butter and garlic. Sauté for 1–2 minutes until fragrant.
- Pour in chicken broth and stir, scraping up any browned bits from the pan. Let simmer for 2 minutes.
- Add cooked noodles and chicken back into the skillet. Toss to coat well in the buttery sauce.
- Stir in Parmesan cheese, salt, pepper, and Italian seasoning. Mix until everything is evenly coated and creamy.
- Garnish with chopped parsley and serve warm.
Notes
- For a lighter version, use part-skim Parmesan and reduce butter to 1 tablespoon.
- Feel free to substitute gluten-free noodles if needed.
- To boost veggies, stir in sautéed mushrooms or peas.
