- 3 lbs potatoes, thinly sliced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella or Monterey Jack
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Fresh thyme or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
- Melt butter in a saucepan over medium heat. Whisk in flour and cook 1 minute until bubbly.
- Slowly add milk and heavy cream, whisking until smooth. Cook 3–5 minutes until thickened.
- Stir in salt, pepper, garlic powder, onion powder, and 1 1/2 cups cheddar cheese. Mix until melted and creamy.
- Layer half the sliced potatoes in the baking dish. Pour half the cheese sauce evenly over them.
- Add the remaining potatoes and top with the rest of the sauce.
- Sprinkle mozzarella and remaining cheddar cheese over the top.
- Cover with foil and bake 45 minutes. Remove foil and bake another 20–25 minutes until bubbly and golden.
- Let rest 10 minutes before serving. Garnish with thyme or parsley if desired.

- For extra smooth sauce, whisk vigorously while adding dairy to prevent lumps.
- Oven times may vary; cover if edges brown too quickly.
- You can prepare the sauce a day ahead and refrigerate; rewarm gently before layering with potatoes.
